Hedgebrook Galettes

A friend recently sent us a copy of Celebrating Radical Hospitality, the new cookbook from Hedgebrook, the women writers’ retreat on Whidbey Island, and it’s even more inspiring than the usual new cookbook. It doesn’t just make me want to cook more, it makes me want to write, it makes me want to retreat to a beautiful island all by myself and just eat and write and eat and hike and write.

But for now, I will just cook and pretend, as I eat these beautiful galettes — delicata with caramelized onion and ricotta filling on a cornmeal crust above; poached pear and frangipane below — that I am at Hedgebrook. The cookbook is transporting that way.

Instant Energy

My family isn’t nearly as sporty as Lisa’s but that doesn’t mean we don’t appreciate a good, portable, high energy snack. A friend of mine found this recipe on Detoxinista and although the name of the site made me think these would be way too green and healthy for us, they just taste great. Honestly, they taste like cookie dough. Click here for the recipe, and then keep ’em in the freezer for a quick boost.

It’s early enough in the season that I am still delighted by All Things Pumpkin: pancakes, salads, stews, curries and of course muffins. This year, I’m updating (and enlarging) last year’s pumpkin recipe. Swapping last year’s sugar coating for this year’s chocolate chips isn’t what makes these healthier, of course, but the reduced sugar, the whole wheat flour, and ground flaxseed do the trick and the muffins are still super moist and delicious.

Sometimes, I wander into the kitchen, hungry or pursued by hungry children, with a clear idea of how to satisfy that hunger. More often, I need to poke around in cupboards and the fridge before I can figure it out. Then there’s what happened the other day: a plan that I’d been hatching in the back of my mind — ruminating on it while I answered email, went for a run, edited two essays and went about the rest of my morning — took a detour when I opened the fridge.
