Unnecessary Olive Crackers
The holidays had us going non-stop in the happiest way. First, a cross-country flight to spend Christmas week with my family; then, we flew back home (where our cousins were already staying in our house) and had one day to visit with the cousins and cook for our annual New Year’s Day party. After the last of our fifty-plus guests left — carrying goody bags of cookies and candy — we packed for a 2-night stay in Lake Tahoe with three other families. Slow Cooking Saves the Day
Over winter break, we rented a sweet little ski cabin. On top of the ski pants and snow boats and snow coats and groceries, I stacked my slow cooker. This was completely against my best-practice packing instincts, but I had a feeling it would make my after-slope life much easier. Truly, I had no idea.
That first snowy evening, I put on a pot to boil water for pasta, the light went on, the water started to steam, I heaped a salad into a bowl, and ten minutes later, the coils were ice cold.
Holidays. Family. Food.
I always used to think of my family of four as kind of the difficult eaters among my broader family of thirteen. We’re the vegetarians, and my kids have been picky. But as we all– my three siblings, two siblings-in-law, niece and nephew– prepared to gather at my parents’ home this Christmas, I realized there were more dietary issues to take into account than in the past. Meal planning everywhere these days involves an increasing number of allergies, food sensitivities, and food preferences, and my family is no different. Among the thirteen of us, we currently have two on low-salt diets, four managing chronic illnesses with dietary adjustments, one vegan, five vegetarians, one on an elimination diet and one more still in the midst of figuring out what foods are causing new sensitivities.
